Sweet and Sour Shrimp Stir-Fry

1/3 cup ketchup3 tbs reduced sodium soy sauce2 tbs packed brown sugar1 tbs white vinegar4 tsp cornstarch1 can (20 oz) pineapple chunks in8 ounces snow peas2 plum tomatoes2 tsp olive oil2 garlic cloves, pressed12 ounces frozen, cooked medium shrimp, thawed, rinsed, and de-tailed
Combine ketchup, soy sauce, brown sugar, vinegar, and cornstarch and whisk.
Drain pineapple, save juice. Measure 1/2 cup juice and add to ketchup mixture (discard remaining juice).
Heat oil in skillet over medium high heat. Add pea pods and garlic. Stir fry 1 minute. Reduce heat to medium stir in ketchup mixture. Bring to boil; cook and stir1 minute until thickened. Add pineapple and shrimp to skillet, toss to heat thoroughly. Remove from heat.
Stir in tomatoes gently.
Serve over rice (not in nutritional content).
