Ingredients
1 Cup Self-Rising Flourenough water to make a batter, a bit thicker than normal pancake batter - I am guessing on the amount of water because Diane just puts in what is needed.When I stirred it, I could see the makings of a dough - hard to describe. They rise beautifully in the skillet!
Directions
Diane measures 1 Cup Self-Rising flour and then mixes in water to make a thick-ish batter. Then heats a pan with just a bit of oil and fries them just like any other pancake. Cook on the first side until you see lots of bubbles and then turn. She checks for "done-ness" before turning out onto a plate.

No salt, no extra leavening. Just a poor-man's pancake but good! They dip them into the syrup. Very tasty! Makes 4 "flitters."
