Chicken Thighs in White Wine

Ingredients
4 chicken thighs, skinned3 tbsp olive oil1/2 cup sliced onion1/2 cup sliced sweet red pepper6 med sized mushrooms, sliced (your choice of type)1/4 cup sundried tomatoes3 fresh basil leaves1 tbsp oregano1 tsp fresh thyme3 oz white wine...or more if desireddash salt & black pepper
Directions
Saute the onions, garlic and red peppers in the oilve oil on medium heat in large skillet or pan.
Add thighs, brown on each side.
Add mushrooms, sundried tomatoes and herbs.
Cover with white wine, adding additinal if needed or desired.
Cook on low heat approximately 30 minutes til thighs are tender and done.

    Just smelling it cook was enough to make my mouth drool. I didn't have the red pepper by itself, but I did have a Summer Vegetable combo in the freezer that had it, so I used the whole bag. I'm glad I did. - 12/15/07
