Beefy (Elk) Mushroom Gravy with Noodles

Ingredients
1 lb Elk Meat, ground or extra lean ground beef1 can Beef Mushroom Soup, small can1 can Mushroom stems and pieces1 cup Onion, chopped 1 tbsp. Garlic Powder 2 tsp. Pepper, black 1/2 c. Milk, nonfat6 cups Whole Wheat Spaghetti, cooked
Directions
Spray skillet with pan spray, brown ground elk (or you can use venison, or extra lean ground beef), add onion, pepper, mushrooms and garlic.

Since this is very lean meat, you don't need to pour off any excess grease.

Add beef cream of mushroom soup and milk. Simmer for about 10 min.

Cook spaghetti as directed on package; drain.

I use 1/2-1 cup of cooked noodles on plate and put about the same amount of meat mixture over the top. You can also, pour the meat mixture over mashed potatoes. Serve with 1 slice Double Fiber Bread and a veggie of your choice.

    It's a good recipe. I was a bit confused by the ref. to beef cream of mushroom and beef mushroom soup, I would up adding the cream of mush and thinning it down with the beef mushroom. I think it would be an excellent base for a shepherds pie. The dish needs some color added to it, its very brown. :) - 6/12/09

    You can use a can of regular Cream of Mushroom soup, and thin down some with milk (I use 1/2 can of milk). I too, use this as a base for shepard's pie. I've also added bell peppers (different colors), or carrots, celery... this depends on what I have on hand.
