Barley, pearled, cooked, 2 cup (remove)Water, tap, 12 cup (8 fl oz) (remove)Onions, raw, 2 small (remove)Red Ripe Tomatoes, 4 medium whole (2-3/5" dia) (remove)Cucumber (peeled), 2 cup, pared, chopped (remove)Arugula, 1 cup (remove)Pepper, black, 1 dash (remove)Basil, 5 tbsp (remove)*Extra Virgin Olive Oil, 2 tbsp (remove)*Balsamic Vinegar, 2 tbsp (remove)
.) Combine wheat berry and water, simmer until tender.
2.) Drain wheat berry and rinse with cold water. Chill for 30 minutes or until cold.
3.) While wheat berry is cooking and chilling, in a bowl, combine onion and vinegar and let stand at room temperature.
4.) Add chilled wheat berry and remaining ingredients and toss salad to combine well.
