Ingredients
4 tbs ghee or oil2 hot green chilis diced1 tbs ginger powder1 tsp cumin seed1/2 tsp black mustard seed2 lbs cauliflower, in florets(about 1 large head)3 medium potatoes, diced or cut into spears1 large tomato1/2 tsp turmeric2tsp ground coriander1/2 tsp garam masala1 tsp brown sugar1 and1/4 tsp salt
Directions
combine chilis, ginger, cumin and mustard in small bowl. heat the ghee or oilin a large saucepan.when hot, add seasonings and fry til mustard seeds turn gray and start popping. then add cauliflower and potatos. Stir fry until they start getting browned. add everything else, stir, then cover, cooking on low heat til veggies are tender. stir occasionally. if things start sticking add a little water. serves 4.
