Chocolate Covered Nut Butter Fudge with Walnuts

2 cups brown sugar (packed)2/3 cup almond butter (or any natural nut butter)2/3 cup milk (I used 1%)1 tsp vanilla100 gram bar of dark cacao chocolate (I used 90%)50 grams chopped walnutsOPTIONAL: if you find that the chocolate is too bitter feel free to add some sugar, or just use milk chocolate. This will change the nutrient content considerably though. I added 4 packets of stevia to my dark chocolate.
Cook sugar and milk in a sauce pot over medium heat to just under the soft-ball stage, to 230º degrees F. Remove from heat and add almond butter and vanilla but do not mix in immediately. Let it cool about 2 minutes. Beat spoon for a few seconds and pour quickly into a greased pan.
Chill. Meanwhile...
Melt chocolate. Either in a double boiler or simply pop into the microwave for a couple of minutes. Remove and stir in stevia (if using).
Pour over chilled fudge. Tip pan to coat evenly. Sprinkle with chopped walnuts.
Chill.
Before cutting, allow to come to room temperature to avoid make the chocolate easier to cut. OR, try using a warmed knife or pizza cutter. Cutting the candy into squares can be a little tricky. I cut mine into 13 x 8 rows. This will equal 104 squares.
Once cut, you can store in fridge for up to three months in a tightly sealed container.
