Apple cinnamon Muffins

Baby Carrots, raw, 100 grams (remove)Apples, fresh, 0.5 small (2-1/2" dia) (approx 4 per lb (remove)Egg, fresh, 3 large (remove)Olive Oil, 2 tbsp (remove)Water, tap, 2 fl oz (remove)**Flax Seed Meal (ground flax), 12 tbsp (remove)*almond meal (almond flour) - 1/4 cup, 3 serving (remove)Cinnamon, ground, 2 tsp (remove)Salt, 0.5 tsp (remove)Baking Soda, 1 tsp (remove)*Stevia, 2 gram(s) (remove)
1.Mix all wet ingredients in a blender till smooth - eggs, oil, water
2.Mix all dry ingredients in a bowl, stir well
3.Add wet ingredients to dry in mixing bowl and mix well
4.Grate Carrots and half an apple together - or chop in blender, then add to mixing bowl
5. Grease a muffin pan and spoon in
6. Bake for 20-25min on 350F
PS: The muffin pan I use makes 20 small bite size muffins
