Banana wheat pancakes with plum syrup

Ingredients
1/4 cup whole wheat pastry flour2 tbsp creme fraiche2 tbsp honey2 tbsp margarine1 overripe medium banana1/4 cup half & half1 large egg3 ripe plums3 tbsp maple syrup
Directions
Melt the butter and mash it with the banana, honey and half&half. Work in the pastry flour. If you want thinner batter, add 1/4 warm water slowly.

Drop 1/4 cup at a time onto a hot pan and cook up like pancakes. Meanwhile prepare the plum syrup.

Cut up the plums (try to mince the skin to keep it in, this is easier with a food processor). Stir them up with maple syrup and warm the mixture slowly on the stove. Don't let it boil, but bring it to a slow simmer to make it gooey and thick. Serve immediately over pancakes when they are ready.

Dollop with creme fraiche on top!
