Makeover Morning Glory Muffins

1 c. Flour, white1 c. Whole Wheat Flour3/4 c. Flax Seed Meal (ground flax) 1/2 c. Honey2 3/4 tsp. Baking Powder2 tsp. Cinnamon, ground3/4 tsp. Salt1/4 tsp. Baking Soda4 Egg whites1/2 c. Applesauce, unsweetened1/3 c. Orange Juice1/4 c. Pumpkin, canned, without salt2 tsp. Vanilla Extract2 c. grated carrots1/2 c. chopped Pecans1/2 c. Coconut1/2 c. Raisins1 medium tart apple, peeled and grated
In a large bowl, combine dry ingredients. In another bowl, beat the egg whites, applesauce, honey, orange juice, pumpkin, and vanilla. Stir into dry ingredients just until moistened. Fold in the carrots, pecans, coconut, raisins, and apple.
Coat muffin cups with nonstick spray or use foil liners. Fill 3/4 full. Bake at 350 degrees F for 15 to 18 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Makes 60 mini muffins.
