Faux Chicken Marsales

Ingredients
1 lb. boneless chicken breast cut into 1 to 2" chunks1 cup stems and pieces mushrooms1/2 cup sliced onions1/3 cup Chicken broth (Marsala wine Optional)1 tbs Oregano Flakes1 dash pepper1 dash sea salt1 Tbs. Olive oil
Directions
Makes 4 servings.
Heat olive oil in large skillet and heat on medium to high heat. Add chicken when oil is hot and sprinkle with 1/2 of oregano, sea salt and pepper. Cover and let saute for 3 minutes. Turn chicken and add onions, mushrooms and remaining oregano. Cover and let saute another 4 min or so. Stir until all onions, mushrooms and chicken appear to be tender. Approx 7 min. Turn to medium high heat and add the chicken broth, allow to simmer for approx 5 min. Stir in sour cream and remove from heat.
Serve over whole wheat pasta and serve with green beans.

*calories are based on using full fat version of sour cream can substitute low fat or light.
