Sweet Potato and Turkey Hash

Ingredients
2 tsp Olive Oil8 oz Sweet potato, peeled & chopped.25 cup Red Bell Pepper, finely chopped2 ea Scallions, thinly sliced2 Tbsp Water1/4 tsp Salt1/8 tsp Pepper1/8 tsp Dried Thyme8 oz Turkey breast meat, cubed2 tbsp Sour Cream
Directions
1. In a large skillet, heat oil over medium heat. Add sweet potato and cook, stirring occasionally, until lightly browned and beginning to soften, about 5 minutes.
2. Add bell pepper and next 5 ingredients. Cook until bell pepper and scallions are softened, about 5 minutes.
3. Stir in turkey and cook until heated through, about 2 minutes. Remove from heat and stir in sour cream. Serve warm.
