Chicken & Squash Medley

2 Chicken Breasts, no skin (12-16 oz) cut into tenders or stripsZucchini, 1.5 cup, sliced Summer Squash, 1.5 cup, slicedRed Onion, .5 cup, choppedSpinach, fresh, 100 grams Butter, 1 TBLOlive Oil, 1 TBLGarlic, 1 clove mincedSalt, .5 tspLemon Pepper to tasteSun-Dried Tomatoes, 20 grams choppedMozzarella or Feta Cheese, 2 ounces shredded or crumbled
Preheat oven to 375 degrees.
Grease an 8x8 inch baking dish. Season chicken strips with salt and lemon pepper and place in baking dish.
Cover dish with foil and bake for 30 minutes or until chicken is fully cooked.
Heat oil & butter in a large skillet. Saute squash, onion and garlic for approximately 10 minutes.
Add chopped spinach leaves & toss until spinach wilts.
Remove from heat and toss with a little salt, pepper & any other spice you desire.
Remove chicken from the oven, uncover, and sprinkle with the sun-dried tomatoes. Spoon squash mixture over chicken & top with cheese.
Set oven to broil & return casserole to oven. Broil for approximately 5 minutes or until (mozzarella) cheese melts.
Makes 2 servings as a main meal, or 4 servings if served with a side dish (re: brown rice, couscous, etc).
