Ingredients
* Spinach, fresh, 4 leaf * Jalapeno Peppers, 1 pepper * Green Peppers (bell peppers), 1 tbsp * *Peppers, sweet, red, fresh, 1 tbsp * *Cheese, Kraft Mexican Style Taco Cheese, 0.25 cup * *Rojo's Mango Peach Salsa, 2 tbsp * Egg, fresh, 2 large * Cilantro, raw, 1 tbsp
Directions
makes 1 serving. dice up peppers and cook until tender. then add chopped spinach and cook til just heated not mushy.remove from pan add eggs that have been whisked , tilt pan to cook to almost done on one side. flip omelet over add peppers and cheese to one side of omelet . fold one side of omelet over and heat until cheese is melted. chop cilantro and to top of omelet along with the salsa.
