Mexican Tortilla Casserole

Ingredients

1 lb. extra lean ground beef14 oz. can no-fat refried beans 1/4 cup salsa4 whole wheat tortillas1 1/2 cups shredded cheddar cheeseOptional: 1/2 to 1 cup shredded carrot
Heat oven to 350 degrees.
Fry ground beef until no longer pink.
Stir in can of refried beans and salsa.
Heat mixture through.
Spray round casserole dish with no-stick cooking spray.
Lay one tortilla in the bottom of the dish and spread approx. 1/4 of beef and bean mixture on top.
Sprinkle approx. 1/4 cup of cheese over that.
Continue to layer, then top all with remaining cheese.
Bake 15-20 minutes, or until hot and cheese on top is lightly browned.
Optional: For more nutritive value, add shredded carrot to beef and bean mixture. For lower fat, use reduced fat cheese, or reduce quantity of full-bodied cheddar.

I used 93% lean ground beef. Also, I used a can of black beans for the refried. I used Rotel tomatoes with cilantro and lime and picante place of salsa, 1/2 t dried cilantro, 1 t cumin, 1T chili powder, 1 sm diced onion, 1 tsp chopped garlic and reduced fat cheese. Hubby asked for seconds! - 10/8/12

Great starter base.Tasted really Good, I added onion and low sod.taco seasoning and green chilies to the meat mix. For even more flavor.Topped with lettuce and tomato, fat free sour cream. Very filling. Although scooping it up on plates at first doesn't look very appetizing. Tastes good! - 4/9/12

We loved this recipe so much---I made it twice this week. The first time I used ground turkey, a can of black beans , 1/2 jar of salsa, half onion, garlic and a teaspoon of cumin. The second time, I used two cooked, shredded chicken breasts and threw in some leftover rice as well. Yum!!!! - 10/4/11
