Potato-Kale Soup

Ingredients
2 tablespoons olive oil1 cup finely chopped onion1 garlic clove, minced4 chicken bouillon cubes7 cups water4 cups small red potatoes, cut into 1/2" cubes1 bay leaf6 cups chopped fresh kale (about 3/4 pound)1 teaspoon dried basil
Directions
Heat olive oil in a large saucepan over medium heat. Add onion; cook 8 minutes or until tender, stirring frequently. Add garlic; cook 30 seconds, stirring constantly. Stir in broth, potato, and bay leaf; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until potato is tender.

Stir in kale and basil. Cover and simmer 10 minutes or until kale is tender. Discard bay leaf. Partially mash potatoes with a potato masher until thick and chunky.

Makes 5 2-cup servings.

    Very good soup. My husband even really liked it. The only change I made was to grate some Gruyere cheese and add about 2 Tbsp to each bowl. Really good. - 10/5/11
