Crustless Bacon Cheddar Quiche

Ingredients
1 C. Cheddar or Swiss Cheese, grated8 slices of cooked crumbled bacon1 1/2 C. 2% milk4-5 eggs (4 medium or 5 large)1 small onion chopped (optional)1/2 C. flour2 T. soft butter1/2 tsp. salt1/8-1/4 tsp white pepper
Directions
Sprinkle grated cheese and bacon in butered 9" pie plate. In blender combine milk, eggs, onion, flour,butter,salt and white pepper. Pour over cheese and bacon. Bake 350 degrees for 30-35 minutes. Let it stand for 5 minutes before serving. Yields 6 servings

My husband has used the precooked bacon pieces to save time. You could add ham or spinach to a different variety.

    This was very tasty, but i think it had just a little bit too much flour and needed to be a little bit creamier. So I'll use half and half in place of the milk and half the flour.YUMMY!!! - 11/30/08
