8 cups homemade turkey stock (made from turkey carcass)1.5 cups turkey meat diced (dark meat, no skin)3 cups cooked Farro (boiled & drained)2 large stalks celery, chopped12 baby carrots, chopped.5 cup chopped green onion (spring onion)1 cup sliced mushrooms3 tbsp dried parsley1 tbsp dried rosemary1 tsp dried thyme1 tsp minced garlic1.5 tbsp Extra Light Olive Oil1 tsp sea salt1 tbsp ground pepper1 tsp ground sage
In stock pot, heat olive oil, add celery, carrots, onions & all spices. Saute until soft, add turkey stock. Add turkey meat, farro, and mushrooms. Let simmer for 2-3 hours on low heat.
