1 kg raw, skinless, boneless chicken breast cut into large pieces1/2 cup chopped onion2 tbsp corn oil2 cloves garlic, minced1 cup chopped tomato1/2 cup chopped bell pepper1/2 cup chopped cilentro12 oz raw potato cut into large pieces10 oz raw zucchini cut into large pieces6 oz raw carrots cut into large pieces1 tsp Madras curry powder1 tsp tumeric powder1 tsp cumin powder1 tsp black lemon powder1/2 tsp cinnamon powder1/2 tsp cardamon powder1/2 tsp ginger powder1/4 tsp red kashmiri chili powder2 Maggi chicken stock cubes2 tbsp tomato paste (optional)juice of 1 lemon (optional)4 cups of water
Heat oil in large pot, add onion, stir. Cook until golden brown.
Add garlic and chicken. Stir.
Add the tomato, bell pepper, cilentro, and spices. Mix well.
Add remaining ingredients.
Cook until chicken is done and root vegetables are tender...about 45 mintues.
Serve with basmati rice or pita bread.
