Foil Packet Chicken Dinner

Ingredients
1 1/2 cups uncooked instant brown rice1 1/4 cups warm water6 boneless, skinless chicken breasts (approx 4 oz each)2 tbsp ranch dressingsalt pepper6 tbsp sharp cheddar cheese, grated24 medium baby carrots, quartered6 tbsp chopped scallions6 tbsp chicken broth
Directions
Preheat oven to 400 degrees. Combine rice and water, let stand 5 minutes. Meanwhile, chop veggies.

Spoon rice mixture evenly onto center of each of 6 large sheets of heavy-duty aluminum foil. Top each with a chicken breast, sprinkle with salt and pepper to taste. Drizzle or spread 1/3 of a tbsp of dressing on each. Top each with 1 tbsp cheese, 4 carrots (16 pieces), and 1 tbsp chicken broth. Make packets out of foil. Place on a baking sheet and bake 25-30 minutes or until chicken is cooked through. Cut slits in foil to release steam before opening. Top with 1 tbsp scallions (each) and serve.

This recipe also works very well on the grill. I usually grill it at a lower heat and so it takes a bit longer to cook.
