Shepherd's Pie with Thanksgiving Leftovers

Ingredients
1 lb turkey breast meat, diced1.25 cups creamed corn1 cup frozen peas1/4 cup turkey gravy2 Roma Tomatoes, chopped2 cups mashed potatoes (made with butter and skim milk)1/2 cup cornbread dressing1/4 cup soy milk1 cup shredded cheddar cheese
Directions
Preheat oven to 350 degrees.

In a medium bowl, mix the corn, turkey, gravy and tomatoes. Set aside.

In a large bowl, mash together the mashed potatoes, dressing and soy milk.

Spray a 2 quart round casserole dish with cooking spray. Layer the following in the casserole dish:

-Turkey
-Corn & peas mixture
-1/2 cup cheddar cheese
-Mashed potatoes mixture

Bake for 25 minutes. Remove from oven and sprinkle with remaining 1/2 cup cheddar cheese. Bake an additional 5-10 minutes or until cheese is melted.

Six servings.
