Pumpkin Muffins

Ingredients
1 1/2 cups flour1/2 cup sugar1 TBSP baking powder (3 tsp)1/2 tsp salt1 tsp baking soda1/2 tsp cinnamon1/2 tsp nutmeg (optional)1/2 cup non fat milk1 15 oz can pumpkin3 egg whites or 1/2 cup liquid egg whites1/2 cup raisins1/4 cup chopped walnuts
Directions
Makes 12 muffins
Combine Bran cereal, pumpkin, egg whites and milk stir an let sit until bran cereal is soft and mushy.

In a separate bowl add flour, sugar, baking soda, baking powder, cinnamon and salt. When the bra in cereal is mushy add to dry ingredients When well mixed add in the raisins and walnuts. Pour into greased muffin tins, bake at 400 degrees for 20 minutes. Makes 12 muffins. 175 calories each.
