Kid-friendly Crunchy Turkey Breast Nuggets

Ingredients
6 oz. of raw turkey breast3/4 cup corn flakesegg wash (egg and 1/4 cup skim milk beaten together - not included in the calorie calculations because it's such a tiny amount that actually gets used)salt to taste
Directions
Makes 2 3oz servings

Cut the turkey breast into "nuggets" and put to soak in egg wash.
Crush the corn flakes -- my son puts them in a plastic bag and uses the rolling pin to do this. Empty them into a bowl or plate.

Use a fork to fish out the nuggets and roll in the cornflake crumbs until well coated. (I use disposable vinyl gloves when handling meat.) Place on a baking tray coated lightly with spray cooking oil and sprinkle with salt.

Bake at 350 for 10 minutes or until turkey is thoroughly cooked. I LOVE my countertop convection oven -- it's so easy to make a quick little batch of these so they're fresh and crispy.

** If your children help out, don't forget to remind them to wash their hands before helping and definitely wash up again afterwards if they touch the raw meat, even if they were wearing gloves. **
