Oven Roasted Vegetables

Ingredients
1 zucchini1 yellow squash1 red onion1# asparagus1 red bell pepper1 yellow bell pepper1 eggplant3 tbls olive oilsalt n pepper to taste
Directions
Preheat oven to 425 degrees. Chop all vegetables. Place in a roasting pan. Sprinkle olive oil plus salt n pepper to taste. Stir to coast all veggies. Roast for 20-25 minutes, stirring occaisionally.
