Sweet & Sour Pork

1 lb. boneless pork chops or pork stew meat1 can pineapple tidbits (juice reserved)1 green bell pepper cut into chunks2 medium tomatoes cut into chunksOnions (if desired)1 cup ketchup1/4 cup vinegar2 tsp. corn starch1 oz. brown sugar, packed3 cups cooked rice
In hot skillet, brown outside only of pork. Place in casserole dish. In saucepan, mix ketchup, pineapple juice, vinegar, cornstarch, and brown sugar. Bring to a boil and simmer 2 minutes. Pour over pork. Cover with foil.
Cook 45 minutes at 375 (1 hour for pork chops)
Add peppers, tomato, pineapple, onions. Cook additional 30 minutes.
Serve over rice
