Basil Chicken

Ghee 8 skinless boneless chicken thighs1 leek chopped1/2 cup orange juice1 tsp dried basil and ground cumin1/2 tsp salt1/2 lime1/4 cup fresh basil leaves coarsely chopped
Serves 4
Lightly oil a large frying pan and set over medium heat. Add chicken and cook until golden. Meanwhile chop onions. When chicken is golden, add onions and saute for a moment. Pour in orange juice. Sprinkle with dried basil, cumin and salt.
Using a wooden spoon, scrape up and stir any brown bits from the pan bottom. Bring to a boil and reduce to med-low heat. Cover and simmer turning chicken halfway through until chicken is done. Remove chicken and place in oven to keep warm. Increase heat to high. Boil pan juices, stirring often until slightly thickened.
Stir in fresh basil, add chicken back into the fry pan and mix, squeeze lime juice over chicekn. Serve over jasmine rice and garnish with fresh mango (optional)
