Jamaican Jerk Chicken

2 TB fresh thyme or 2 tsp. dried1/2 tsp. crushed red pepper1/2 tsp. salt1/4 tsp. allspice4, 4 oz., boneless, skinless chicken breasts1 sliced papaya1 sliced mango1 medium red onion, sliced1 yellow or red bell pepper, sliced
Heat oven to 375. Mix thyme, red pepper, salt and allspice and rub into chicken breasts.
Spray a glass baking dish w/ cooking spray. Place chicken in the pan and bake covered for 30 minutes. Turn chicken; Add other ingredients around the chicken and bake uncovered another 20-30 minutes.
Makes 4 servings. Easily doubled w/ more chicken and more fruit.
