Low Carb Almond Meal Pancakes

Ingredients
• 1 cup almond flour• 2 eggs• 1/4 cup water (for puffier pancakes, you can use sparkling water)• 2 T oil• 1/4 teaspoon salt• 1 T sweetener• 1 T vanilla
Directions
1. Mix all the ingredients but the butter.
2. Melt butter in pan on medium heat.
3. Pour onto heated pan in 3-4" pancakes and turn when the side starts to brown. The edges will begin to look done.
4. Cook for a few minutes on the other side, remove and top with your favorite sugar free syrup!

Should make about 6 3-4" pancakes. About 2.8 net carbs per pancake.

    I think I would add cinnamon and leave out the vanilla next time I make it. "Problem" even then: too yummy to limit oneself to one serving! - 3/2/13
