Ingredients
6/ 6" Corn Tortillas2 cups sliced zucchini1/2 cup chopped onion1/2 cup frozen corn2 cloves garlic1 T EVOO
Directions
Slice up zucchini, chop onion (long pieces are good). Mince garlic. Heat oil over medium heat & add zucchini & onion. Cook 1-2 minutes before adding corn. Cook until onion is almost translucent & turn heat down to low. Add garlic & stir. place filling in corn tortillas and serve hot.
