2 tbsp butter1 onion chopped, about 1 cup6 cups chicken broth1 bag frozen cauliflower (~4 cups) thawed1 head cauliflower florets only1/2 C heavy cream1 tbsp red pepper (optional)
melt butter in the bottom of a large dutch oven and saute onion until fragrant. Add the chicken broth and bag of cauliflower and bring to a boil. Boil until the florets are falling apart, about 20-30min. Transfer to a blender or food processor in batches and blend until smooth. Return to the pot and stir in the heavy cream and then add the chopped raw cauliflower and red pepper (optional) and bring to a boil until the florets are tender. Makes about 10 1 Cup servings.
