margo's multi grain bread

Ingredients
3c ww flour2.5 c white flour2 tbsp sugar1 tsp salt4.5 tsp yeast21/8 c water.5 c nine grain cereal .5 c gr flax2 tbsp oil
Directions
makes 2 loaves or 1 loaf and 9 buns

soak the 9 grains in boiling water
while soaking put everything else in the mixer, add the 9 grains. Kneed until elastic apprx 7-8 min. Rest until dbl apprx 30-45min. Punch down. rest 10 min. Roll out and shape. 2 loaaves or 1 loaf and 9 buns. Rest until risen. Bake 350 for 30-40 min until hollow sounding when knocked on the bottom.

    I tried to make this but although I am a very good bread baker, I could not get the ingredients to knead together. I tried various things such as adding more liquid but I ended up throwing away the dough. Too bad -- I was really looking forward to it! - 9/16/07
