4 eggs1 1/2 cups sugar1/2 cup canola oil1/2 cup applesauce (unsweetened)1 (15 oz) can pumpkin puree1/2 cup whole wheat flour1 1/2 cups all-purpose flour2 tsp baking powder1 tsp baking soda2 tsp ground cinnamon3/4 tsp salt1/3 cup butter, softened3 oz Neufchatel cheese, softened1 Tbsp milk1 tsp vanilla2 cups powdered sugar
In a medium bowl, beat the eggs until foamy. Add the sugar, oil, applesauce, and pumpkin; beat on medium speed 2 minutes. Beat in the whole wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, and salt for 1 minute on low speed. Pour into a grease jelly roll pan and bake at 350 25-30 minutes or until edges are lightly browned and a toothpick inserted near the center comes out clean. Let cool. For the frosting, beat together the butter, cream cheese, milk, and vanilla. Beat in the powdered sugar; spread on bars. Cut into 24 pieces and serve.
