Sicilian Vegetable Soup

Ingredients
Garlic, 3 cloves, minced1T red pepper flakes1 medium Yellow Onion8C vegetable broth (I use Better Than Bouillon No Beef Base) 8oz can Italian Plum Tomatoes1 medium Red PotatoOrganic Red Lentils2 large Carrots, diced3 Celery stalks, diced 15oz can Organic Kidney Beans, rinsed15oz can Organic Organic Pinto Beans, rinsed1 bunch Red Swiss Chard, cut into 1" piecesDash of OreganoJuice of 1 Lemon Black pepper to taste
Directions
Saute garlic & red pepper flakes in 2T of the broth for a few minutes. Add onion and a bit more broth, if needed, and saute until translucent. Add remaining broth & tomatoes. Cook for 5 minutes than add potato & lentils, carrots and celery. Cook for 15 minutes. Add all remaining ingredients except Black Pepper. Simmer until beans are heated through and chard is wilted.

Garnish with black pepper.
