Skinny Sweet Potato Souffle

Sweet Potato: 1Fat Free Soy Milk-vanilla: 1TCinnamon, ground: .25 tspCloves, ground: .5 tspNutmeg, ground: 0.25 tsp* Sometimes I use allspice and pie spice instead of separate spices.Brown Sugar: 1.5 tsp packedPecans: .5 oz (10 halves, crushed)Land O Lakes, Salted Whipped Light Butter: 1 Tbsp, Separated into 4 chunks. (any light butter will do, but calories may change)
Bake sweet potato in microwave, peel and mash in a bowl with spices, milk, one tablespoon of the brown sugar and 2 chunks of the butter.
Dish the mixture into 2 ramekins if you have them or the smallest baking dish you have. I spray lightly with olive oil.
Then mix together the remaining brown sugar with pecans and the 2 remaining chunks of butter and separate between each ramekin bake until topping is golden brown.
*it sounds more complicated than it is. I don't measure so exactly but I just wanted to do so for calorie counts!
