Double Decker Quesadillas

1 lb. grilled chicken, diced or pulled1 TBL salsa8 oz. shredded cheddar cheese4 large tortillas1 cup refried beans, heated
Preheat a large skillet to medium heat. On the bottom half of a tortilla sprinkle some cheese, spread some salsa and plenty of chicken then top with a little more cheese. Fold the other half over to form a semicircle. Spray the pan with non-stick spray and place the quesadilla into the pan and cook until the bottom is golden brown then turn and cook until the other side is also golden brown. Remove to cutting board and smear some refried beans on top of the quesadilla with the hot beans before cutting and serving. Repeat to make four quesadillas. Serve with salad or chips and salsa.
