SHEPHERD'S SALAD

3 large tomatoes, diced 3 cucumbers, peeled and diced 2 green peppers, diced 1 mild onion, peeled and diced 3 or 4 scallions, minced (green and white parts) 1 hot chili pepper, minced, or more to taste 1 cup coarsely chopped parsley Lemon wedges or lemon-olive oil dressing Salt to taste
Combine all the vegetables in a large salad bowl. Serve with lemon wedges or a dressing made from freshly squeezed lemon juice and olive oil in 1:1 ratio (i.e. lemon-olive oil dressing ). Salt to taste.
Makes about 6 servings (but this depends on how much or little you eat per serving)
Note: this recipe does not reflect the nutritional value for olive oil. Also, I have eaten this salad with olives and feta cheese as well, and it was good. So if you would like to do the same, you would have to take that into account when doing your calculations.
