Ingredients
8 medium redskin potatoes, scrubbed and grated3 medium onions, minced or grated1/4 c. whole wheat flour1/4 c. canola oil4 large eggssalt and pepper to taste
Directions
mix all ingredients EXCEPT the oil together. Meanwhile, put the canola oil in a metal 9X13 inch pan in the oven while it is preheating. When the oven and the oil are hot, remove the pan, pour the hot oil into the potato batter, and mix quickly. Dump the potato batter into the pan (it will sizzle a little). Smooth it out, but don't press it down. Bake at 350 for one hour or until golden and a little crispy. Serves 8. Very nice with applesauce and lite sour cream or Greek yogurt.
