Quinoa and Black Bean Salad

1 c quinoa2 green onions8 grape tomatoes1 roasted red pepper1 - 15 oz. can black beans1 sprig mint (or more)1/2 c parsley (or more)Dressing2 TBL olive oil2TBL lime juice2 cloves garlic finely chopped
Cook quinoa according to package directions. Chop onions, tomatoes, pepper, mint, and parsley. After quino is cooked, let cool. Add the chopped veggies and herbs, mix together.
In another small container mix olive oil, lime juice, and garlic. Pour over quinoa mixture.
Refrigerate
