Black Bean Chili with Buffalo

1 tbsp olive oil1 lb ground buffalo meat1 med onion - or 1/2 large onion1 green, yellow, or orange bell pepper (or half of one)1 14.5 oz can diced tomatoes1 14.5 oz can diced tomatoes - or what is in the cabinet1 15 oz can black beans
Makes 6 servings - 1 c each.
Chop onion and bell pepper. Heat 1/2 tbsp in frypan and heat 1/2 tbsp olive oil in Dutch oven on stovetop. Brown the meat in the frypan and saute the onion and pepper in the Dutch oven. When the onion is translucent and has some browned edges, add the tomatoes and black beans. When the meat is browned, add the buffalo to the Dutch oven too. Add chili powder to taste, up to 2 tbsp, and onion powder, 1/2 tsp if available. Turn heat down and simmer for an hour. Can simmer longer for more blending if desired.
