Quinoa Cakes

1 cup cooked quinoa (I boiled it with a stick of cinamon)3/4 cup of all purpose flour2 teaspoons baking powder1/2 teaspoon coarse salt1 large egg1 large egg white (wipped until peaks form)1 tablespoon unsalted butter, melted, plus more for the cakes.1/4 cup low fat milk2 tablespoons of pure maple syrupFresh fruit (optional, for serving)
Boil 1/2 a cup of dry quinoa in 2 cups of water , put a cinamon stick in the mix, bring to a boil and cook it thru.
In a bol mix all dry ingredients, flour,quinoa,salt,baking powder. Meanwhile in another bol mix all the wet ingredients except for the egg whites.
pour the weat ingredients into the dry ones and whip to combine.. When all ingredients are mixed, fold in the egg whites (already whipped) until all ingredients are incorporated.
Coat a large skillet lightly with butter over a medium heat, pour a tablespoon of batter per cake into the skillet, cook for about 2 min or until golden brown. Serve with maple syrup and fresh fruit.
Makes about 10 cakes
