1 package meatless ground1 small sweet onion, shredded1 cup shredded carrot1 cup shredded zucchini, juice squeezed out2 large eggs2 slices wholewheat toast, crumbleddash of salt and pepperany other spices you may want to add2-3 tbsp ketchup1 tbsp mustard
So easy! Preheat oven to 400 degrees. Mix all ingrediants together in a bowl (except the ketchup and mustard). Divide mixture into 8 muffin cups. Mix ketchup and mustard in a small dish. Spoon mixture over top of meatloaf as a glaze. Pop tray into the oven for 20-25 min.
Makes 8 muffin cup-sized meatloaves. They can even be frozen for later!
