beef stroganoff

Ingredients

1.2 lbs of ground beef1.5 cups of sliced mushrooms1/2 of an onion chopped8 oz of spiral pasta1 cup of lowfat buttermilk.2 cup of half and half1 Tbs of corn starch1 cup of red wine
Serves 6 - but not with a full serving of pasta (only used 4 servings of pasta)
Saute the mushrooms in vegetable oil for 5 mins or until lightly brown, then add chopped onions and cook for 1 minute. Transfer the mushrooms and onions to a bowl. Brown the hamburger meat in the same pan on medium/high heat until brown. Put the browned meat in a bowl. Now add the red wine and reduce until have of the liquid remains in the pan. Then add the half and half, buttermilk and 1 Tbs of corn starch and whisk until slightly thickened. This will take about 5 minutes of simmering. Cook the pasta until desired doneness, drain. Once the sauce has thickened put the beef, mushrooms, and onion back into the sauce. Pour sauce over pasta and serve.
