Squash Bisque

Butternut Squash, 6 cups, cubedCarrots, raw, 2 cup, chopped Onions, raw, 1 cup, chopped Bacon, 1/2 lb thick cutWhite Wine, 1/2 cupChicken Broth, 3 cupsHeavy Whipping Cream, 1 cup,Cayenne Pepper, .5 tspSalt & Pepper
Cut bacon into 1 inch pieces and add to stock pot. Cook over medium heat until bacon begins to crisp. Add onion and cook 5 minutes. Add diced carrots and cook 3 minutes, stirring frequently. Add cubed squash with skin removed. Stir and cook 3 minutes. Add white wine and cook 2 minutes. Add chicken stock until pieces are just covered. Bring to a simmer and cook until soft. Blend with wand mixer or blender. Return to heat and add cream & cayenne pepper. Season to taste with salt & pepper and nutmeg. Served.
