CTNT - Fish with Herbed Bread Crumbs

Ingredients
2 Slices Country Kitchen Lite White2 Tbsp Chopped Fresh Parsley1 Tsp Fresh Thyme Leaves4 Cod Filets - 4-6 oz each2 Tbsp Smart BalanceSalt & Pepper to taste
Directions
Preheat the oven to 450. Place the bread, parsley, and thyme in a food processor and pulse until you have small but not superfine bread crumbs.

Lay the fish on a baking sheet and season all over with salt and pepper. Smear the tops with a thin layer of softened butter, then press the herbed bread crumbs into the butter so that they adhere to the fish.

Bake for about 20 minutes, until the fish is cooked through and flakes with gentle pressure from your finger.
