Chicken Noodle Plus

2 boxes all natural, low sodium chicken broth2 all natural chicken breast (frozen or not )1 bunch spinach1 bag frozen peaswhole wheat (or rice) penne (or other small noodle)cherry tomatoes (optional) - cut in halfrosemaryparmesean cheesethyme
Bring 1 1/2 boxes of chicken stock and two cups of water to boil over medium-high heat. Add chicken. Once chicken is cooked (it will float) pull out and set to rest on cutting board.
Add peas and noodles to boiling water. While peas and noodles cook, cut chicken into small pieces. Add salt, thyme, rosemary, and pepper to taste. Add chicken and tomatoes back to pot. Turn heat down and let simmer. Once the skin on the tomatoes begins to split, turn heat off and cool.
Serve soup hot with grated cheese on top .
