Roasted green bean, turkey bacon and smoked Gouda frittata

Ingredients
4 eggs1/2 cup skim milk4 slices turkey bacon, chopped and cooked until almost crispy1 1/4 cups green beans, roasted and chopped4 ounces shredded smoked Gouda cheeseSalt and pepper, to taste
Directions
Preheat oven to 400 degrees and spray a nonstick, oven-safe skillet; baking dish or springform pan with nonstick cooking spray.

Cook bacon and set aside. Roast green beans (toss in a bit of olive oil, salt and pepper and roast for 15-20 minutes in a 400-degree oven, turning occasionally), chop and set aside. Shred cheese and set aside.

Whisk together eggs, milk and salt and pepper. Add in bacon, green beans and cheese and whisk until all ingredients are incorporated.

Pour mixture into pan and make sure to evenly distribute bacon, green beans and cheese among egg mixture.

Bake for 15 to 20 minutes or until eggs are cooked and top is golden brown. Slide frittata onto cutting board and cut into four wedges. Serve warm.
