Banana Pancakes for 1

Ingredients
eggmilk or buttermilkbaking sodavegetable oilfloursaltbaking powder1 small banana
Directions
Put 1 small egg in measuring mixing bowl, beat. Add enough buttermilk to make the volume measure 3/4 cup. Add a pinch of baking soda and mix well. Add 1-1/2 tsp. vegetable oil. Measure 1/2 cup of flour in sifter or small bowl and sift with 1/8 tsp. salt and 1/2 tsp. baking powder. Peel and mash 1 small banana and add to batter; mix well. Makes 2 large pancakes or 3 small pancakes.
