Bubble and Squeak (Potatoes, Cabbage, and Onion Hash)

Ingredients
4 cups chopped, cooked, cold potatoes4 tbsp butter or lard1 onion, minced3 cups chopped, cooked cabbage or brussel sproutssalt and freshly ground pepper to taste
Directions
Roughly chop the cold potatoes and crush slightly. In a heavy frying pan (preferably cast iron), melt half of the fat and lightly fry the onion. Mix in the potato and greens and season well with salt and pepper. Add more butter or lard. Press the bubble into the hot fat and fry over a moderate heat until browned underneath - about 15 minutes. Turn the bubble over, add the last of the butter or lard, and fry until the other side is browned.
