Chicken Saltimbocca

4 (6oz) Chicken Breast halves1/4tsp salt1/4tsp black pepper4 fresh sage leaves-finely chopped4 thin pieces of prosciutto1/2 flour2tbsp olive oil1/2cup Marsala wine1/2 cup chicken broth

Pound chicken to 1/4in thickness. Season with salt & pepper. Place sage on one side and top with prosciutto. Dredge in flour. Heat oil in med-high pan. Place chicken in pan prosciutto side up. Cook 3-4mins turn. Cook another 3-4mins. Add Marsala and broth. Simmer for about 5mins or until sauce is about 1/4 cup.
Serving is 1 chicken breast and 1 tbsp of sauce.
