30 min 5 ingredient Crock Pot Veg Beef Soup

Ingredients
1 lb. ground beef1 medium onion, diced5 low sodium beef bullion cubes (or 5 tsp)2 lb. bag of frozen mixed vegetables (corn, green beans, peas, carrots)water
Directions
Brown the ground beef (I add some powdered garlic while it's browning) and put in crock pot. Dice onion and use lefrover grease from beef to brown onions slightly, then put in crock pot. Add bag of frozen mixed vegetables. Use boiling water to make bullion from beef cubes and add until it, plus any extra water, covers all the ingredients well. Cook on low for at least 4 hours (you're really only cooking the vegetables). Makes about 20 1 cup servings, and is a great base for leftovers! If it's fairly stew-like, use it to make a shepherd's pie the next day (Just put in baking dish and make some instant mashed potatoes for a topping; brown in oven, add shredded cheese). Or if more watery, freeze and add instant rice while reheating for veggie beef and rice soup.
